Sausage and Butter Bean Hot Pot Recipe

We recently had cell group at our house, it happens every fortnight and I always cook a meal for everyone. I always try to make something delicious and healthy but that doesn’t cost much. One of my favourites was my sausage and butter bean hot pot. I was really pleased with how it turned out so I thought I’d share the recipe!

  • 4 onions
  • 4 cloves garlic
  • some mixed herbs
  • a couple of handfulls of mushrooms
  • a pack of free range sausages (our local farm shop sells packs of frozen sausages for half price or less – Bargain!)
  • 2 tins butter beans
  • 2 tins Chopped tomatoes
  • a spoonful of coconut oil
  • 6 medium potatoes – slices 1cm thick

In a heavy bottomed pan fry off the onion and garlic and sausages, all other ingredients topping keeping potatoes to one side. Slice and slightly par boil potatoes and arrange on top. Put a lid on and cook in the oven for about 1/2 hour or till it looks done!

Serve with peas and crusty bread. The price of this works out at only 60p per portion serving 8 people.
